BAKED TUNA N' RICE


INGREDIENTS:

1 tablespoon margarine

1/4 cup finely chopped onion

1/4 cup finely chopped green pepper

2 cans (7 oz. each) Tuna, drained and flaked

1 medium tomato, peeled and chopped and drained

1 tablespoon lemon juice

1/4 teaspoon salt

1/8 teaspoon pepper

3/4 cup mayonnaise

1/2 cup coarsely shredded cheese

2 cups of cooked rice

UTENSILS NEEDED:

Small fry pan

Dry measuring cups

Measuring spoons

Wooden spoon

Paring knife

Cutting board

Baking dish grater

Instructions:

In a small frying pan, melt margarine over medium heat. Sauté onion and green pepper stirring frequently, until tender, about 5 minutes. Stir together with next 6 ingredients. Add rice, mixing well. Turn into a greased 2—quart baking dish. Top with cheese. Bake uncovered in 400℉ oven for 20 minutes or until heated and cheese is melted.
